I'M GOING TO DISNEYLAND!

I am absolutely blessed to be going to the CHA Winter 2009 Trade Show with Moxxie. They are just too wonderful and generous to me (A HUGE thanks to Jennifer and Jen!).  The show is in Anaheim, California the 25th thru the 28th of this month. We are staying at a place named Candy Cane Inn--how Stinkin' Cute is that!  This boutique hotel is 2 blocks from the show and 250 yards from the main gate of Disneyland!  HOW COOL IS THAT? Here is a pic of the hotel grounds....beautiful, and the weather has been in the 80's (which absolutely beats the 11 degrees we have right now!)

My sister and I just booked tickets to see the Broadway musical "Wicked" while in Chicago for the CHA show...I am SOOOOO Happy about this, I have wanted to see it since I first saw the reviews! Yippee for us!

Lovin' the Breakfast Plans

I am on a mission...to eat better.  Really. I am so tired of being tired, and not having any energy that is not artifically supplied (i.e. by infusing myself with tons of caffeine). So I am on to making sure that I eat breakfast daily.  Here is what I am eating today!  It looks absolutely GORGEOUS and almost too pretty to eat (I did eat it!)  the plate is 6" x 8" and full of the rainbow of fruits: pineapple, kiwi, strawberries (and they were delicious!), apples, and a banana.

I have been alternating with fresh fruits, organic Stoneyfield yogurts with natural granolas, eggs with rye toast, and sometimes, but rarely, good for you cereals with tons of fiber (think brans, shredded wheat, etc.) which I love!  I am not a  sweets breakfast person, I would rather eat pancakes at dinner or late night times rather than first meal of the day.  I have found in my not-so-scientific breakfast ritual, that eating 2 eggs in the morning packs the most energy for me throughout the day.  The fruit is yummy, and I ended up nibbling on it from breakfast, break and lunch!

11.29.07 LOVIN' IT...Coconut Creme Coffee Creamer

Tropical thoughts...just hard to explain...I am so LOVIN' Coffeemate's Coconut Creme coffee creamer.  It is SOOOOO GOOD.  I love it in hot coffee, however this summer, after adding up what I was paying for iced coffee at the local Caribou, I decided that I would try making my own, and wallah--I came up with an iced coconut concoction that is so yummy, creamy, cold, and just plain, old-fashioned DELICIOUS! 

There is no exact science to my recipe, just toss some ice cubes into a large cup (larger than what you will be drinking from--this is just to shake/mix it up)...2 teaspoons of instant coffee (or 1 teaspoon of instant espresso)that has been diluted in 2-4 tablespoons of hot water, fill glass 1/3 full with milk, top off with creamer until taste to your liking! Shake it up.  You can also blend these in a blender for a smoothie/frappucino type drink. I do them in other flavors too, my DH loves the Irish Creme ones...

11.28.07 Lovin' It...Cheese and Crackers...Cherry Cordial M & M's...YUMMY

I am just LOVIN' cheese and crackers...it almost does not matter what kind either!  I have them for lunch often--like today :) -- and a lot of times before I go to bed as a snack. The bestest crackers that I have found recently come from the Archer line from Target!  I am lovin' their garlic crackers and their multi-seed crackers.  I am also lovin' peanut butter on crackers (seasame or water crackers) as well as cajun crab spread on them--especially on the seeded kind!  To me, cheese and crackers is a meal!  Whenever I find myself standing in front of the fridge trying to figure out what to eat, cheese and crackers is always the easy standby.  My DH would not agree though, they are a definite appetizer in his book!

Ooohh!...I just discovered Cherry Cordial M & M's (at Target again!) and I am LOVIN' these little morsels!  They are dark chocolate and cherry...YUMMY! They are a bit expensive (sale price was 2 for $5 for 7 oz. bags) but after eating some, they are pretty much worth it! 

11.27.07 a.m. I'm thinking chocolate...and eggs-YUK!

This morning I am thinking of chocolate...Lindt Dark Chocolate Truffles to be exact!  I SO LOVE these little bits of heaven, so smooth and creamy...but for breakfast? I think not!  Off to make yummy scrambled eggs--my favorite breakfast meal.  So I will have to contain my chocolate crave for later...hhhmmm...maybe there is still a bottle of chocolate truffle mint coffee creamer in the fridge that I can have with the morning coffee...YUMMY!

Lovin' the sunshine...or what there is of it! I am so blessed to be able to work from home.  As I sit here in my office this morning, I get the best of the morning sky from my window...It is definitely a winter sky, however today, the sun is really trying to shine through those ugly gray clouds...

I'm also lovin' my So Stinkin' Cute (SSC) dog Riley...he is all curled up on the couch in my office, snuggled down in my soft, pink, furry little throw blanket...I think he found the heating pad under there!  Really, really, SSC!
